Strawberry Rhubarb Pie

I have a thing for pie. I love pies. I don't think I have met one I didn't like. Have you ever seen the movie "Michael", when the girl sings the song about pie? This recipe that I found on Simply Recipes is for my brother Brian. This is his favorite pie in the entire world. Our Aunt Dorothy would always make it for him when we were growing up. I think she still does sometimes. I promised him I would make him one soon to make up for the strawberry cake I destroyed for his birthday when I was about 9. I put about 3 cups of water and 2 cups of oil in by accident and it was horrible. Kind of like a Jello cake but tasted terrible and our dad made everyone eat a piece to keep me happy. So this recipe is for him!

3 1/2 cups rhubarb stalks cut into 1/2 in pieces (No leaves, these are poison. Trim ends)
2 cups strawberries sliced
3/4-1 cup sugar
2 T quick Tapioca
1/4 t salt
1 t orange zest
1 double pie crust recipe (I use the one from Better Homes and Gardens)

Preheat oven to 400. Toss rhubarb and strawberries with sugar, Tapioca, salt and orange zest. Let sit for 10 minutes. Place one rolled out pastry in pie dish, fill with filling. Roll out second pastry and place on top. Crimp sides and slit for steam. Bake at 400 for 20 minutes then reduce heat to 350 for 40-50 minutes. Make sure to place a cookie sheet under it to catch any juices that overflow.
