Doritos Casserole!

I posted about this recipe in This Week's Menu but, this one I had to single out. I fixed it last night and Hubby said it was "the best meal he's had in years". He even ate more for lunch today! He is my pickiest eater, even beats Bubby. It doesn't help that with all his travelling, he eats at all the restaurants you can think of. It's hard for me to beat them. So this is a big win for me! 1 family size Doritos. (I used Walmart brand nacho cheese)
1 onion diced
1 lb lean ground beef
1 clove garlic minced
1 cup salsa
1 package taco seasoning
1 cup sour cream
1 can cream of chicken soup
2 cups shredded cheese

Optional Toppings:

Preheat oven to 350 degrees. Cook ground beef with onion and garlic until no pink remains. Drain. Add taco seasoning, salsa and 1/3 cup water. Cook until thickened, about 5 minutes. Remove from heat. In large bowl, mix beef mixture, sour cream, soup and 1 cup of cheese. Slightly crush Doritos, you don't want crumbs. Layer about 1 1/2 cups of Doritos in bottom of 13x9 pan or 2 qt casserole dish. Layer with beef mixture. Repeat layers until top layer of Doritos and cheese. Spray a piece of aluminum foil with cooking spray to cover the dish. Bake 30 minutes covered and then 20 more uncovered or until hot and bubbly. Enjoy!
