Pizza Night!


Since Bubby had a friend over tonight, Doodle was home and Hunny was craving pizza, I decided to make homemade pizza! I think I have found the best and easiest pizza dough recipe. I tweaked it a little to fit my tastes, but the basic dough is so simple! I found it on AllRecipes.com. Here's the basic dough that makes one pizza that is about 8 pieces. I want to say a medium pizza. Or 2 calzones.

1 envelope yeast
1 cup warm water (lukewarm, not too hot, not too cold)
1 teaspoon sugar
2 1/2 cups flour (I think it called for bread flour, I just used all purpose)
2 Tablespoons olive oil
1 teaspoon salt

Put the warm water in a bowl and sprinkle in the yeast and sugar. Mix and then let sit about 10 minutes or until creamy and foamy. Next add the flour, olive oil and salt. I also added about 2 teaspoons Italian seasoning and 1 teaspoon garlic powder at this step. Mix. This will be sticky. In the recipe, it said to turn out onto a floured surface and pat or roll into a round. I turned onto a floured surface, flipped it to cover it in flour and then patted it right onto the ready pan. Also have the pan ready, lightly greased and with cornmeal if you prefer. I didn't use the cornmeal. Then top as you want. I made one with pepperoni and one with pepperoni and onion. Bake at 450 15-20 minutes or until golden brown. Then I made this one for Doodle-

With Doodle's stomach issues, she generally can't handle tomato sauce anymore, so she loves white pizza! White pizza is just pizza with an alfredo cheese sauce instead of tomato sauce. Alfredo is so easy to make and takes less than 15 minutes. Here's how I do it-

 1/4 cup butter
1/4 cup flour
1 clove garlic minced
salt
pepper
Italian seasoning
Garlic Powder
1/2-1 cup milk
1/2-1 cup Parmesan cheese

In medium saucepan, place butter over medium heat. Let butter melt. Add garlic. Then add the flour, and seasonings to taste and whisk in. I used about 1/2-1 teaspoon of each. I don't really measure. Let cook a minute or two to get the raw flour taste out. This will thicken quickly. Slowly add in the milk, whisking as you go. You want a sauce consistency. Maybe a little thinner since when you add the parmesan cheese, it thickens a little more. Add the parmesan cheese when you reach the consistency you want with the milk. Remove from heat. Spread on your ready pizza crust and top with the toppings you choose. Bake as directed.
