Blueberry Cobbler!


As you know, every year I buy a 10 pound box of blueberries from a local farm. They are the best!
Normally, these are eaten as is or frozen and eaten. But, there are a few recipes that I do make from time to time and this is one of them. It's from Better Homes and Garden, a favorite, and is for Blueberry Crisp! I think you could use any kind of fresh fruit on hand, or even canned. And it's always good with a little whipped cream on top!

3 T all purpose flour
2 T sugar
6 cups blueberries
1/4 cup lemon juice
1 cup packed brown sugar
3/4 cup all purpose flour
3/4 cup quick cooking oatmeal
1 1/4 t cinnamon
1/2 cup cold butter

Preheat to 375. In bowl, stir the 3 T flour and sugar. Add blueberries and lemon juice. Toss to coat berries. Spread evenly in ungreased 3 quart baking dish. In separate bowl, combine brown sugar, 3/4 cup flour, oatmeal and cinnamon. With pastry cutter or two knives, cut in butter until resembles coarse crumbs. Sprinkle evenly over berry mixture. Bake 30 minutes or until top is brown and edges are bubbly. Cool at least 45 minutes before serving. Top with whipped cream or even ice cream! Yum!
