You've Got to Try This Recipe!

So, as you know, I am trying to develop my green thumb, but I have not tried a real garden in a few years. Not to worry. My lovely neighbor, Alice, and my dad keeps us stocked in the wonderful goodies from their gardens! Well, we had a lot of squash and I have had enough of fried squash. So, in comes Pinterest to the rescue! I found this recipe on The Kitchn and Doodle ate 2 helpings and even Hubby liked it! This is what it looks like before it goes in. I used squash and zucchini.

2 lbs squash or zucchini or both
1/4 c olive oil (I used EVOO)
1/2 c parmesan cheese
1/3 c bread crumbs (I didn't have any so I crushed up saltines. Worked just as good!)
1/2 tsp salt
1/4 tsp pepper
And I threw in about 1/2 tsp of garlic powder because everything tastes better with garlic!

Preheat oven to 350. Cut squash in rounds and toss with olive oil. In separate bowl, combine bread crumbs, cheese, salt and pepper and garlic if using. Arrange squash in pan, I used a 13x9, then sprinkle the mixture over. Cover with foil and bake for 30 minutes. Uncover and bake 5 minutes more until nice and brown.
