I'm So Excited!!!

See this? This is a pot of spaghetti sauce with meatballs. Bubby and Hubby both requested spaghetti and meatballs tonight. But, that's not what I'm excited about. What I'm so excited about is this is the first dish I got to use my very own, grown by my own hands basil! My basil plant is big enough to pick leaves off of now! It smelled so good! I used 3 leaves of it. Here's my made up recipe that I took a little of this and a little of that from a bunch of recipes I saw today. I will post the meatball recipe too!
1 can Hunts spaghetti sauce any flavor
1 can diced tomatoes italian seasoned
1/4 large onion chopped
1 small green pepper chopped
2 cloves garlic minced
1 T butter
2 tomatoes chopped
garlic powder
3 fresh basil leaves, chopped

Start by melting the butter in the bottom of a large pan. Add onions. Let them sweat for about 5 minutes. Add green pepper. After about 5 more minutes, add garlic. Let them all cook for about 2 minutes. Then add the sauce and canned tomatoes. Then add all the seasonings. I just added about half a palm full of each. Oh and I added a pinch of sugar for the canned taste and a pinch of red pepper flakes. Get that to cooking while you make the meatballs.

1 lb hamburger
3/4 c bread crumbs ( I used smashed saltines)
1/4 c parmesan cheese
1 egg beaten
1 minced garlic
1/4 large onion diced

Mix all this together in a bowl. Oregano and pepper are about half palm fulls. Roll about a golf ball size balls. This will make about 20 meatballs.

Drop all these meatballs into the sauce. Do NOT stir for about 10 minutes. If you stir too soon, they will be mush. Let simmer about 2 hours so the meatballs will cook through. Use with your favorite pasta!
