This is another recipe that I got off Pinterest a long time ago and can't give credit where it's due. Anyone who knows where this came from, please leave a comment and I will update. This is a favorite recipe that I have made double batches of before. It keeps well and is great reheated. It's wonderful to take to a sick loved one or a pot luck!
3 T Extra virgin olive oil 2 c shredded chicken
1 onion diced 2 c steamed rice
3 celery diced 16 oz wild rice
3 carrots diced 1 t salt
2 garlic cloves minced 1/2 t pepper 1/4 t garlic salt
Heat oil in frying pan. Saute onion, celery, and carrots till onion almost translucent . Add garlic. Stir in chicken, both rices, and salts and pepper. Reduce heat. Cook for about 5 minutes. Transfer to 13x9 pan or casserole dish. Begin to prepare the cheese sauce which is the most delicious part of this dish.
4 T butter 2 c chicken broth
1/4 c flour 2 c cheddar cheese
1/4 t salt and pepper
Melt butter in pan. Whisk in flour and salt and pepper. Add broth slowly and cook until thick. Add cheese and salt and pepper. After cheese has melted, pour over rice and chicken mixture and slightly stir in. Add more cheese over top. Bake 25- 30 minutes in 350 degree oven.
